old school marinara






















1 28oz can whole plum tomato
half a small onion, sliced thin, about 1/3 cup2 cloves garlic, sliced thin

olive oil

salt

pepper

tsp sugar

fresh basil,(optional)












heat oil in med skillet over med/medhigh heat



add onion and garlic, saute until softened. be careful not to brown, (this tends to make sauce bitter), season with salt and pepper.











crush tomatoes by hand in large bowl


















add crushed tomatoes to skillet, season with salt and pepper, add sugar.


stir, bring to steady simmer. let simmer uncovered for 10-15mins, stirring occasionally.
turn off heat, add chopped basil, serve over pasta.
